1kg potatoes, peeled and cut into quarters (Desiree are good for this one)

40g butter, melted

½ cup thickened cream

½ cup milk

Salt and pepper


1. Put potatoes in a pot and cover with water. Bring to a simmer and cook for about 25 minutes or until the potatoes are soft.

2. Drain potatoes and throw into a bowl, add remaining ingredients.

3. Using the Masher attachment of the Sunbeam Stick Mixer, mash the potatoes until smooth. Season with salt and pepper.

4. Add some extra butter before serving, just because you can.
