Cumin Beef Steaks with Kumara Chips

  • 4 sirloin beef steaks, trimmed
  • 1 tablespoon ground cumin
  • 2 tablespoons olive oil
  • 800g kumara (orange sweet potato), cut into 1cm-thick slices
  • ¾ cup sour cream
  • 2 tablespoons chopped fresh coriander leaves
  • 1 tablespoon warm water
  • 1 garlic clove, crushed
  • Baby rocket leaves, to serve


  1. Place beef on a plate. Sprinkle both sides with cumin. Drizzle with half the oil. Cover with plastic wrap and refrigerate for 10 minutes.
  2. Meanwhile, preheat barbecue grill plate and flat plate on medium. Place kumara in a large bowl. Drizzle with remaining oil and gently toss to coat.
  3. Barbecue the kumara chips on flat plate, turning occasionally, for 15 minutes or until golden and tender.
  4. Barbecue the beef on grill for 4 minutes each side for medium-rare or until cooked to your liking.
  5. Combine cream, coriander, water and garlic in a bowl. Taste and season with salt. Serve beef with chips, rocket and coriander cream.
