Best Ever Ribs

These twice cooked ribs are so tender that they will become a must at every BBQ

  • 1kg American pork spare ribs
  • ½ cup barbecue sauce
  • ½ cup tomato sauce
  • 1/3 cup sweet chilli sauce
  • 1/3 cup firmly packed brown sugar
  • 2 tablespoons French mustard
  • 2 garlic cloves, crushed


  1. Preheat barbecue to 200ºC using indirect heat or preheat oven to 200ºC. Pour 1 cup water in the base of a roasting pan. Place a wire rack over the roasting pan. Place ribs in a single layer onto the rack. Cover tightly with foil. Bake for 1 hour using indirect heat for barbecue. Remove from the barbecue/oven and allow the ribs to cool completely.
  2. Combine sauces, sugar, mustard and garlic in a large ceramic or glass bowl. Add the ribs and turn to evenly coat. Cover with plastic wrap and refrigerate overnight if time permits.
  3. Preheat barbecue grill plates on medium. Remove the ribs from the marinade. Keep the marinade for basting the ribs while cooking.
  4. Barbecue the ribs, brushing with the marinade often, for 5-8 minutes each side or until the ribs are golden brown and warmed through, discard any leftover marinade. Serve.
