Low-fat Apple Cake

Low fat doesn't have to mean low taste

  • Cooking oil spray
  • 90g reduced-fat dairy spread
  • 1/3 cup brown sugar
  • 2 eggs
  • 2 cups plain flour
  • 2 teaspoons baking powder
  • 800g can apple pie fruit no added sugar
  • 1 teaspoon ground cinnamon


  1. Preheat oven to 180°c. Spray an 11 x 21cm loaf pan with cooking oil. Line base and 2 opposite sides with non-stick baking paper, allowing it to overhang.
  2. Beat the spread and sugar in a large mixing bowl on low speed until pale and fluffy. Add eggs, one at a time and beating well after each addition, until combined.
  3. Stir in the flour, baking powder, apple and cinnamon until just combined. Spoon into prepared pan and smooth surface.
  4. Bake for about 1 hour or until a skewer inserted into the centre comes out clean. Transfer to a wire rack to cool before cutting into slices.
