  • 80g butter, chopped
  • ¾ cup caster sugar
  • 3 eggs
  • 2 1/3 cups plain flour
  • 1 teaspoon baking powder
  • ¾ cup blanched almonds
  • 1 tablespoon water
  • 2 tablespoons caster sugar, extra


  1. Preheat oven to 180°c. Spray two baking trays with cooking oil.
  2. Use an electric beater to beat together the butter and sugar until pale and creamy.
  3. Add eggs, one at a time, beating well between each addition, until combined. Stir in flour, baking powder and almonds until combined.
  4. Turn dough out onto a lightly floured surface and knead until smooth. Divide dough in half and shape each half into a log. Place logs on prepared trays. Brush tops with water and sprinkle with extra sugar. Bake for 20 minutes or until firm. Remove from oven and set aside on trays to cool completely.
  5. Reduce oven temperature to 160°c. Use a serrated knife to cut each log into .5cm-thick slices. Arrange on trays. Bake, for about 18-20 minutes, turning biscuits halfway through cooking, or until dry and crispy. Remove from oven and set aside to cool.
