Citrus Pancakes

A super easy recipe that the entire family will enjoy!

Ingredients

1 1/3 cups milk

1 egg

1 teaspoon vanilla bean paste

1 ¾ cups plain flour

1 teaspoon baking powder

½ teaspoon bicarbonate soda

Butter, for cooking

2 lemons,quartered

¼ cup caster sugar

Method

  1. In a jug combine milk, egg and vanilla. Set
    aside.
  2. In a separate bowl sift together flour, baking powder and baking soda. Add sugar.
  3. Make a well in the centre of the dry ingredients. Add wet ingredients and stir until just combined.
  4. Heat a large non-stick frying pan over medium heat. Melt a small amount of butter. Pour in ¼ cup of pancake batter and cook for 3-4 minutes or until bubbles appear on the surface. Turnover and cook for a further 1-2 minutes. Transfer to plate. Repeat with remaining mixture.
  5. Serve pancakes drizzled with fresh lemon juice and caster sugar.
