For this recipe you will need a 20 x 20cm square tin, lined with baking paper.

You will need:

Cookie Dough layer

  • 120g chilled butter, diced
  • 120 light brown soft sugar
  • 1 medium egg
  • ½ tsp vanilla extract
  • 225g plain flour
  • ½ tsp bicarbonate of soda
  • ½ tsp salt
  • 1 tbsp cornflour
  • 100g milk chocolate chips
  • 100g white chocolate chips

Biscuit layer

  • 16 chocolate flavour sandwich biscuits

Brownie layer

  • 100g dark chocolate, snapped into pieces
  • 100g chilled diced butter
  • 140g golden caster sugar
  • 2 medium eggs, whisked together
  • 50g plain flour
  • 25g cocoa powder
  • 100g milk chocolate chips
  • 100g white chocolate chips

Let's make it:

Step 1:

Starting with the cookie dough layer, place the butter and sugar into the stand mixer bowl, turn on HeatSoft™, select Soften and begin mixing on a low speed. As the butter softens increase the speed until the mixture is light and fluffy. Turn off HeatSoft™.

Step 2:

Add the egg and vanilla and mix until smooth.

Step 3:

Tip in the flour, bicarbonate of soda, salt and cornflour and mix gently to form a dough.

Step 4:

Add the chocolate chips and briefly mix until incorporated.

Step 5:

Place the dough into the prepared baking tin, pressing out evenly to form a uniform layer.

Step 6:

Pop this into your freezer for 30 minutes.

Step 7:

Pre-heat the oven to 180°C or 160°C fan.

Step 8:

Next make your brownie layer.

Step 9:

Place the dark chocolate pieces into the stand mixer bowl and fit the Heatsplash™ guard.

Step 10:

Select Melt and allow the chocolate to start softening before mixing. Melt the chocolate completely before adding the butter and again allow this to melt whilst mixing.

Step 11:

Pour in the sugar and mix gently for a couple of minutes before adding in the beaten eggs. Turn off HeatSoft™.

Step 12:

Tip in the flour and cocoa powder and mix gently until smooth, before adding in the chocolate chips, do not overmix.

Step 13:

Remove the cookie dough from the freezer, place the sandwich biscuits on top, I keep them whole and can get roughly 16 in a flat layer.

Step 14:

Next pour over the brownie mixture before levelling off and placing into your hot oven.

Step 15:

Bake for approx 30 minutes until set. Remove from the oven and sit the tin onto a baking rack until fully cooled.

Step 16:

Remove the brownie from the tin and cut into squares. Enjoy!
