You will need:
- 4 large potatoes
- 2 chicken thighs, diced (1cm pieces)
- 1 tsp each: smoked paprika, garlic powder, onion powder
- 1 small head of broccoli, cut small
- 1 cup pizza cheese
- 1 cup Greek yoghurt or sour cream
- Salt and pepper
- Olive oil
- 2 green onions, sliced
- Hot sauce (optional)
Let's Make It:
Step 1:
Place each potato on a square of foil. Drizzle with olive oil, a pinch of salt, and pepper. Wrap to seal.
Step 2:
Place potatoes in the air fryer at 200°C for 30-40 minutes until soft. Check with a sharp knife to see if they’re done.
Step 3:
Remove potatoes and set aside.
Step 4:
Add diced chicken and broccoli to the air fryer. Spread in a single layer and cook at 170°C for 10 minutes.
Step 5:
Slice potatoes in half and fluff with a fork. Spoon a dollop of yoghurt on each half, spreading it out. Season with salt and pepper.
Step 6:
Top with cooked chicken and broccoli, then sprinkle over the cheese.
Step 7:
Pop everything back in the air fryer at 200°C for 4 minutes, or until the cheese is golden and bubbly.
Step 8:
Serve with another spoonful of yoghurt, a sprinkle of green onions, and a dash of hot sauce if you like it spicy!
