For this recipe, you'll need a Sunbeam Mini Snack Press & Grill.
You will need:
- 4 slices of wholemeal bread
- Softened butter
- 1 smoked mackerel fillet, skinned and flaked
- 1 medium tomato, deseeded, and chopped
- 2 spring onions, finely sliced
- 1 tbsp capers, chopped
- Squeeze of lemon juice
- Ground black pepper
- 2 tbsp mayonnaise
- 60g grated cheese of your choice
Let's make it:
Step 1:
Butter all 4 bread slices, on 1 side only, these will be the outside of your sandwich.
Step 2:
Place the remaining ingredients into a bowl and mix to combine
Step 3:
Preheat your Mini Snack.
Step 4:
Assemble your sandwiches using the mixed filling.
Step 5:
Toast each sandwich for 4-5 minutes until golden.
