You will need:
- 1 tbsp olive oil
- 1 tbs finely chopped onion
- 1 tbs finely chopped red capsicum
- ¼ tsp ground cumin
- ¼ tsp ground coriander
- Salt
- 200 g tinned crushed tomatoes
- 2 eggs
- Coriander or parsley leaves, to serve
Let's Make It:
Step 1:
Into a 12-15 cm small cast iron pan or ceramic dish, combine the oil, onion, capsicum and spices with a generous pinch of salt. Stir well to combine, then place into the Sunbeam Air Fryer and cook at 200°C for 5 minutes.
Step 2:
Open the air fryer and add the crushed tomatoes to the spiced vegetables and stir well to combine. Cook for a further 5 minutes at 200˚C.
Step 3:
Open the air fryer drawer a third time and use a metal spoon to create two small indentations into the tomato mixture. Crack the eggs directly into the indents. Cook for a further 8-10 minutes at 200°C, or until the eggs are cooked to your liking.
Step 4:
Carefully remove the shakshuka (careful, it’s hot!) from the air fryer. Sprinkle with herbs and serve.
