For this recipe, you'll need a Sunbeam SteamFry Air Fryer + Steam.

You will need:

  • 500g halloumi, cut into 3cm cubes
  • 2 tbsp vegetable oil
  • 2 large onions, thinly sliced
  • 3 cloves of garlic, finely chopped
  • 30g ginger, peeled and finely chopped
  • 2 tsp ground cumin
  • 2 tsp turmeric
  • 1 tbsp curry powder (of your choice)
  • ½ tsp chilli flakes
  • 100ml water
  • 500g cherry tomatoes, halved
  • 500g spinach leaves
  • Salt to taste
  • 4 mini naan breads

Let's make it:

Step 1:

Before you begin, prepare and assemble all your ingredients. Remove the air fryer tray from the drawer, you won't need this until the end. Fill the water tank and empty the drip tray.

Step 2:

Select Air Fry, 15 minutes, 200°C and allow your drawer to heat for 3 minutes.

Step 3:

Add the halloumi to the hot drawer (this should sizzle a little) ensure this is placed in a single layer for even cooking. Cook the halloumi for 3-4 minutes. Open the drawer and tip off the milky white liquid.

Step 4:

Drizzle the halloumi with 1 tbsp oil, replace the drawer and continue cooking, turning over the halloumi half way through to encourage even crisping. Once cooked, remove from the drawer and place into a bowl lined with some kitchen paper.

Step 5:

Add the sliced onion to the drawer along with the remaining oil. Select Airfry, 20 mins, 200°C.

Step 6:

After 5 minutes, stir the onions and cook for a further 5 minutes.

Step 7:

Add the garlic, ginger and spices and stir well. Cook for approx 2-3 minutes before stirring in the water and tomatoes.

Step 8:

Continue with the remaining cook time which is approx 5-6 minutes.

Step 9:

Stir in the halloumi.

Step 10:

Add half of the spinach and pat down, do not stir at this point. (Although this looks like a lot, it quickly wilts)

Step 11:

Select Steam and alter the time to 6 minutes. Close the drawer and select start, after 3 minutes open the drawer, stir and add the remaining spinach, patting down gently.

Step 12:

Allow the unit to finish steaming before opening and stirring. Adjust the seasoning to your preference and remember halloumi is naturally quite salty.

Step 13:

Sit the air fryer tray gently on top of the Saag.

Step 14:

Sprinkle the naan bread with a little water, sit this on top of the tray and Airfry 3-4 minutes, 200°C until hot and crisp.
