You will need:

  • 250g pkt of plain biscuits
  • ½ cut desiccated coconut
  • ½ cup walnuts, chopped
  • 2 tbsp cocoa
  • 150g dark chocolate, chopped
  • 100g unsalted Butter, chopped
  • 295g can of condensed milk

For The Topping

  • 200g dark chocolate, chopped
  • 50g unsalted butter, chopped

Let's make it:

Step 1:

Line the base and sides of a slice tin with baking paper and set aside.

Step 2:

Add dark chocolate and butter in the Sunbeam Mixmaster® HeatSoft™ Planetary Mixer bowl, turn on HeatSoft™, select MELT and allow the ingredients to start softening before mixing. Pour in condensed milk and mix through until the mixture has melted. Turn off HeatSoft™. Set aside for a few minutes to cool.

Step 3:

Meanwhile, place the biscuits into a zip lock bag, and push out all the air before sealing. Use the end of a rolling pin to carefully crush the biscuits. Or get the kids to break them up using their hands!

Step 4:

Place the broken biscuits, the coconut, walnuts, and cocoa into the melted chocolate mixture. Mix on medium speed until everything has combined.

Step 5:

Press mixture firmly into the prepared tin with the back of a wooden spoon and chill for 30 minutes or until firm.

Step 6:

Clean out the mixing bowl and get ready to make the chocolate topping. Add butter and chocolate in the mixing bowl. Turn on HeatSoft™, select MELT and mix on low speed. Gradually increase speed until the chocolate and butter have melted and combined. Turn off HeatSoft™.

Step 7:

Pour the chocolate mixture over the hedgehog, and transfer into the fridge for 1 hour or until completely set.

Step 8:

Cut the hedgehog into squares and enjoy! Store in an airtight container in the fridge
