You will need:

  • 1 Tbs coconut oil
  • 2 red onions, chopped
  • 5 cloves garlic, crushed
  • 5cm fresh turmeric peeled and finely grated (or 2 tsp turmeric powder)
  • 20 zucchinis, sliced
  • 8 cups vegetable stock
  • Garnish with toasted pepitas, zucchini noodles and optional chilli flakes.

Let's make it:

Step 1:

Select SAUTÉ on the Pressure Multicooker, press START/STOP. Allow to preheat.

Step 2:

Add oil and zucchini noodles, sauté for 4 minutes until soft remove, set aside.

Step 3:

Add onion, garlic and turmeric to the cooking pot, sauté for 4 minutes.

Step 4:

Add sliced zucchini and stock.

Step 5:

Secure the lid, ensure the steam release valve is in the seal (closed) position, press SOUP adjust TIME to 5 minutes and press START/STOP.

Step 6:

Once cooking has finished, release the pressure and allow to cool.

Step 7:

With a stick blender blend soup into a thick consistency and season with sea salt and freshly cracked pepper.

Step 8:

Serve with zucchini noodles, pepitas and optional chilli flakes.
