Crispy air fryer fish and chips with panko-crusted fish, golden chips, and minted peas. Classic takeaway made healthier at home.

For this recipe, you'll need a small ½ litre heatproof pudding bowl and Sunbeam Multi Zone Steam Air Fryer.

You will need:

  • 800g white potatoes
  • 1 tsp fine salt
  • 4 tbsp plain flour
  • 2 eggs, beaten
  • 50g salt and vinegar crisps, blitzed or bashed into crumbs
  • 75g panko breadcrumbs
  • 2 tbsp vegetable oil
  • 4 skinless and boneless fish fillets, approx 125-150g each, barramundi or snapper work well
  • 300g frozen peas
  • 25g butter
  • 1 tbsp finely chopped mint leaves
  • Squeeze of lemon juice, plus wedges for serving

Tartare sauce & ketchup to serve.

Let's make it:

Step 1:

Give the potatoes a good scrub and then cut into 1cm-thick chips. Rinse the chips well, place into a bowl and cover with the cold water and the tsp salt.

Step 2:

Set aside for 15 mins.

Step 3:

Drain the chips, place onto a clean tea towel and dry them thoroughly.

Step 4:

Place into a bowl, add the oil, give them a good shake to coat.

Step 5:

Remove the airflow trays from both baskets.

Step 6:

Divide the chips between the 2 baskets. Cook on Air Fry, Match, at 200°C for 25 minutes ensuring you shake the chips occasionally.

Step 7:

Lightly brush 2 mesh trays with oil.

Step 8:

Get 3 dinner plates ready. Add the flour to 1 and season with salt and pepper.

Step 9:

Add the beaten eggs to the next plate and tip the crisp crumbs mixed with the panko onto the 3rd plate.

Step 10:

Ensure the fish fillets are dry (pat with some kitchen paper).

Step 11:

Place each fillet into the flour and dust off. Next place into the egg to coat before adding to the crumb plate for the coating. Repeat with the remaining fish fillets.

Step 12:

Add 2 coated fillets to each mesh tray.

Step 13:

Once the chip cook time has finished, tip one of the chip baskets into the other basket to combine. Insert the fish into the empty side to cook, placing a small black roasting tray underneath the mesh trays on the base, to catch any crumbs.

Step 14:

Cook on Air Fry 200°C, Match, for 12 minutes. Once the halfway time is indicated, shake the chips and swap the mesh trays around.

Step 15:

Cook the frozen peas for approx 2-3 minutes. Drain and mash lightly with the butter, stirring in the chopped mint and a little salt to taste.

Step 16:

Once the Air Fry cook time has ended, check the fish is cooked through.

Step 17:

Serve piping hot with the seasoned chips, crushed peas, a wedge of lemon and some tartare sauce. Don’t forget the ketchup for the chips!
