For this recipe, you'll need a Sunbeam SteamFry Air Fryer + Steam.

You will need:

  • 4 skinless and boneless cod fillets, approx 200g each
  • 225g cooking chorizo, skin removed and cut into chunks
  • 75g breadcrumbs
  • 1 tbsp chopped parsley
  • Zest of 1 small lemon

Let's make it:

Step 1:

Remove the cod fillets from any packaging, set aside on a large plate and pat dry with some clean kitchen paper.

Step 2:

Heat a frying pan over a moderate heat until hot, add the chorizo chunks, cooking until the oil is released and the chorizo starts to brown a little.

Step 3:

Remove from the heat and set aside to cool a little.

Step 4:

Place into your food processor along with any oil and pulse until a coarse crumb like texture is achieved.

Step 5:

Add this to a mixing bowl, along with the breadcrumbs, parsley and lemon and mix together. Spoon the crumb topping onto each cod fillet and pat down gently to cover the top.

Step 6:

Place into your fridge to firm up for approx 30 minutes.

Step 7:

Once ready to cook, carefully place the fillets into your air fryer drawer onto the tray. Air fry 180c for 12-15 minutes depending on the thickness of your fish. Remove when the crumb is golden and the fish is cooked.

Step 8:

Serve with a wedge of lemon, some creamy mash and a few steamed greens.
