Whether it's a birthday celebration or just a sweet craving, this moist chocolate sponge cake will be your go-to dessert in the air fryer.

For this recipe you'll need a Sunbeam Multi Zone Air Fryer Oven, and you can use one of your air fryer baskets as your loaf tin. Just remove the air flow rack, line with a little baking parchment paper and ensure this stays within the tin. When baking a cake of this size it is recommended that the whole air fryer capacity is used and not the dual capacity, this ensures a good air flow is achieved, essential when baking cakes of this size.

Ingredients:

  • 250g softened butter
  • 250g caster sugar
  • 4 medium eggs
  • 200g self raising flour
  • ½ tsp baking powder
  • 50g cocoa powder
  • Pinch salt
  • 100g ground almonds
  • 100ml milk
  • 75g dark chocolate chips

Chocolate Fudge Frosting

  • 150g dark chocolate
  • 75g butter
  • 50g sieved icing sugar
  • 1 tbsp cocoa powder

Let's make it:

Step 1:

Beat the softened butter and sugar together until light and fluffy. Gradually add the eggs, beating well after each addition.

Step 2:

Sieve the flour, cocoa powder and baking powder together. Add these to the bowl along with the salt, ground almonds and milk.

Step 3:

Mix gently until fully combined, then stir through the chocolate chips.

Step 4:

Spoon the mixture into your prepared tin and level off the surface.

Step 5:

Remove the middle partition from your air fryer. Slide the large roasting tray into the bottom of the air fryer.

Step 6:

Select bake 200°C and allow the air fryer and tray to pre-heat for a couple of minutes. Add the cake and adjust the temperature and time to bake, 150°C, 70 minutes.

Step 7:

Your cake is cooked once a skewer is inserted into the centre and comes out clean. Remove the cake from the air fryer and allow to cool slightly before turning out to fully cool onto a wire rack.

Step 8:

Whilst the cake is cooling, prepare your frosting. Melt the chocolate and butter together in a microwave, or over a pan of simmering water. Whisk in the icing sugar and cocoa and allow to firm up before using.

Step 9:

Once cold, top with the chocolate frosting before cutting into slices and serving.
