You will need:

  • 115g unsalted butter
  • 225g dark chocolate melts
  • 100g caster sugar
  • 100g brown sugar
  • 3 whole eggs
  • ½ tsp vanilla essence
  • 80g plain flour
  • ¼ tsp baking powder
  • 15g cocoa powder
  • Pinch of salt

Let's make it:

Step 1:

Preheat the oven to 170°C. Grease a standard sized brownie tin and line with baking paper.

Step 2:

Place the butter and dark chocolate in the Sunbeam Mixmaster® HeatSoft™ Planetary Mixer. Fit the scraper beater and HeatSplash™ guard. Turn on HeatSoft™, select MELT, then mix on low speed, and slowly increase speed to help break up the chocolate and butter. Turn off HeatSoft™.

Step 3:

Add the sugar, eggs, vanilla and mix on low speed until just combined for 30 seconds. Add flour, baking powder, cocoa powder and salt and mix on low speed until just combined for 30 seconds.

Step 4:

Pour the batter into the lined baking tin, and bake for 30 minutes, or until crusty on top and soft in the centre.

Step 5:

Leave to cool in the tin, then turn out onto a wire rack. Cut into squares to serve.
