For this recipe, you'll need a Sunbeam SteamFry Air Fryer + Steam.

You will need:

  • 6 rashers streaky bacon
  • 500g potatoes (about 2 large)
  • 2 Tbsp finely sliced chives
  • 1 cup grated cheddar cheese
  • 2 eggs
  • 2 Tbsp plain flour
  • ½ cup panko breadcrumbs
  • 6 cheddar cheese cubes (optional) Spray oil

Let's make it:

Step 1:

Place the bacon into the Sunbeam SteamFry Air Fryer and select AIR FRY for 8 minutes on 200°C. While the bacon is cooking, peel the potatoes and cut into 3cm chunks.

Step 2:

When the bacon is cooked, remove to a plate and allow to cool. Add the potatoes to the air fryer and select STEAM. Cook on 20 minutes for 100°C. While the potatoes are cooking, roughly chop the bacon.

Step 3:

When the potatoes have finished cooking, remove to a large bowl and mash with a potato masher. Add the bacon, chives, grated cheese, 1 egg and season with a generous pinch of salt and pepper. Mix well to combine.

Step 4:

Set up a crumbing station by placing the flour, remaining egg and panko breadcrumbs in three separate shallow bowls. Whisk the egg well. Divide the potato mixture into six even portions and shape into round croquettes. If you like, push a cheddar cheese cube into the centre of each croquette. Dip each croquette into the flour, egg, then panko and repeat until they are all crumbed.

Step 5:

Spray the croquettes generously with the spray oil, then place into the air fryer drawer. Select AIR FRY for 200°C and set timer to 15 minutes and cook until the croquettes are golden and crisp. Serve immediately.
