Easy beef taco recipe made in a pressure cooker, perfect for game day entertaining. Bold, spicy mince served with corn chips and fresh toppings.
You will need:
- 1 kg beef mince
- 1 tbsp olive oil
- 1 small brown onion, chopped
- 1 red chilli, seeds removed, finely diced
- 1 tbsp lime juice
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp paprika
- 1 tsp chili powder
- 1 tsp beef stock powder
- 800g tin chopped tomatoes
- 4 Tbs tomato paste
- 230g corn chips
- Optional toppings: grated cheese, diced avocado, coriander leaves
Let's make it:
Step 1:
Press BROWN. Add beef; cook and stir 6 to 8 minutes or until browned, stirring to break up meat. Drain fat. Remove beef to large bowl. Wipe the Cooking Pot clean.
Step 2:
Heat oil on HIGH. Add onion, jalapeño pepper, lime juice, salt, garlic powder, ground cumin, paprika, chili, beef stock powder and red pepper flakes; cook and stir 2 minutes. Stir in beef, tomatoes and tomato paste. Secure lid. Press BEANS/CHILI, set pressure to HIGH and time to 10 minutes. Make sure Steam Release Dial is in the “Seal” (closed) position. Press START/STOP.
Step 3:
Once cooking is complete, natural release pressure 10 minutes. Release remaining pressure. Press BROWN. Cook, uncovered, on HIGH 5 to 10 minutes until desired consistency. Top chips with beef mixture and desired toppings.
