You will need:

  • 180g butter, room temperature, chopped
  • 1½ cups raw sugar
  • 2 eggs
  • 2¼ cups self raising flour
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ cup buttermilk
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla essence
  • 1½ cups very ripe mashed banana

Let's make it:

Step 1:

Preheat oven to 180°c. Grease and line a 23cm cake pan.

Step 2:

Using a Mixmaster bowl, beat butter and sugar on High speed, until well combined. Add eggs, one at a time, beating well between each addition. Reduce to Low speed and add sifted dry ingredients and combined buttermilk, vinegar and vanilla in two batches. Add bananas and mix until combined.

Step 3:

Pour mixture into prepared tin and bake for about 40 minutes or until cooked when tested with a skewer.

Step 4:

Allow cake to cool in pan for 5 minutes before transferring to a wire rack to cool.
