Learn how to make crispy, golden baklava in your air fryer with layers of buttery filo pastry, spiced nuts, and orange honey syrup. Ready in just 25 minutes!

For this recipe, you'll need a Sunbeam Alinea Wide Ceramic Air Fryer.

You will need:

  • 18cm or 20cm square cake tin
  • 30 sheets of filo pastry, trimmed to fit the tin exactly.
  • 100g unsalted butter or ghee
  • 40ml vegetable oil
  • 175g of nuts (walnuts, blanched almonds, pistachios) + 1 tbsp for garnish
  • ¼ tsp ground cinnamon

Good pinch of salt

  • For the syrup
  • 150g light brown soft sugar
  • 2 tbsp orange flavoured honey
  • 1 thick slice lemon
  • 150ml water
  • 1 cinnamon stick

Let's make it:

Step 1:

Make your syrup first so this has time to cool. Place all the ingredients into a saucepan and bring to the boil. Simmer gently for approx 15 minutes, until slightly thickened and reduced. Set the syrup aside to cool completely.

Step 2:

Make the nut filling by placing the nuts, cinnamon and salt into a mini food processor or chopper. Pulse these until they are a coarse texture. Set aside.

Step 3:

Melt the butter, mix in the vegetable oil. Grease the base of the bakeware tin with the butter and oil mix.

Step 4:

Place a sheet of the filo into the tin and butter well, repeat with another 9 sheets until you have 10 buttered sheets.

Step 5:

Split the nut mixture in half (reserve 1 tbsp for decoration), sprinkle 1 half over the buttered pastry, then continue with another 10 sheets, buttering each layer as you place them on top. Again, add the remaining nut filling, then finish with the last 10 sheets of buttered filo.

Step 6:

Using a sharp knife cut the baklava into 16 pieces. Pour over the remaining butter mix and cover with a piece of foil. Add some baking beans, don’t press the foil down.

Step 7:

Remove the divider from the air fryer, add the large black baking tray to the base and sit your baklava on top.

Step 8:

Cook on Air Fry 190°C for 20 – 25 minutes until nice and golden.

Step 9:

Remove the cooked baklava from the air fryer and allow a few minutes for the baklava to cool slightly, pour over the cold syrup, this may hiss slightly as its poured over. Sprinkle over the chopped nuts. Set aside to fully cool. Once cold, gently remove the pieces from the tin and serve cold or warmed.
