For this recipe, you'll need a Sunbeam Multi Zone Air Fryer Oven.

Ingredients:

  • 300g Oyster mushrooms, torn into pieces
  • 2 tbsp fajita seasoning mix
  • 1 ½ tbsp oil
  • 1 medium red onion, sliced
  • 2 peppers of your choice, sliced into strips
  • 4 soft tortillas
  • To serve - guacamole, salsa, sour cream, rocket leaves

Let's make it:

Step 1:

Remove the air flow trays from both baskets.

Step 2:

Add the mushrooms and ½ tbsp oil to one of the baskets.

Step 3:

Add the remaining oil, red onion and peppers to the 2nd basket and stir.

Step 4:

Select match 1=2, air fry, 180°C, 15 minutes. This will ensure both baskets begin and finish cooking using the same temperature and time.

Step 5:

After 10 minutes of cooking open both doors and add 1 tbsp fajita seasoning to each basket, stir this in and cook for the remainder of the time.

Step 6

To serve, add a spoonful of guacamole to a warmed tortilla wrap. Add a few rocket leaves, the fajita mushrooms and peppers and then top with salsa and sour cream before serving.
