1 zucchini, finely sliced lengthways
50g baby spinach
4 slices of wholegrain bread
½ avocado, sliced
2 - 4 slices cheddar cheese
3 Tbs pesto


1. Turn grill on and pre heat for 3-4 mins. 

2. Cook zucchini until soft, set aside.

3. Add spinach and cook for 1 – 2 mins until wilted, set aside.

4. Top bread with avocado, spinach, cheese, zucchini, and pesto, and add bread slice on top. 

5. Close lid and grill for about 4-5 mins until golden brown.
