Baked Cherry Cheesecakes

Moreishly good, these cherry cheesecakes take no time at all in the Halo Air Fryer! Feel free to swap out the cherries with other fruits such as blueberries or raspberries.

For the base

150g plain biscuits

½ tsp ground cinnamon

60g butter, melted


375g cream cheese, at room temperature, chopped

1/3 cup caster sugar

1 teaspoon vanilla extract

2 eggs

2 teaspoons lemon juice

½ teaspoon finely grated lemon rind

100g sour cream

1 tablespoon plain flour

150g frozen pitted cherries

Icing sugar, for dusting


  1. Grease three 10cm spring-form cake pans and line the bases with baking paper.
  2. To make the base, process the biscuits, cinnamon and butter in a food processor until a fine crumb. Evenly press mixture into the base of pan. Refrigerate while you make the filling.
  3. Add cream cheese, sugar and vanilla to the bowl of your Sunbeam Mixmaster with the scraper paddle attached. Mix on low speed until thoroughly combined. Add eggs, one at a time, beating well after each addition. Add lemon juice, zest, sour cream and sift over the flour. Mix on low speed until smooth. Swirl through frozen cherries and pour mixture over biscuit base. 
  4. Place cheesecakes into the bowl of the Halo Air Fryer and cook on the grill (single) heat setting on LEVEL for 15-20 minutes (cover with foil to avoid excess browning on top). The cheesecakes are ready when firm but the centre wobbles slightly when the pan is gently tapped. Allow to cool for 20 minutes before placing in the fridge for at least 2 hours (or overnight) until chilled. 
  5. To serve, remove from fridge 15 minutes before serving. Remove from pan and place on serving plate. Dust with icing sugar and top with fresh cherries and whipped cream to serve.
